Omelette with Basil and Halloumi

Step 1

Beat with a fork along with the salt and pepper.

Step 2

Remove the basil leaves and cut with your hands into large pieces. In a frying pan, place the butter, the olive oil and heat until the butter melts. Fry the tomatoes and the basil for one minute stirring until the tomatoes wither a little. Add the eggs and shake the pan so the mixture spreads.

Step 3

When the omelette starts to get cooked use the spatula to unstick it from the pan walls and sprinkle with the halloumi. When fully cooked, transfer to a plate, fold and serve immediately.

For a healthier version, replace the halloumi with Kouroushis light cheese and the butter with some extra olive oil. For even fewer calories, replace the oil with some cooking spray!


2 eggs
1 teaspoon salt
¼ teaspoon pepper
15 grams butter
10ml olive oil
2 basil twigs
8 cherry tomatoes, cut in half
100 grams Kouroushis halloumi, grated on the thick side of the grater
