Strained Yoghurt

Concentrated fermented milk is a fermented milk product. These products contain starter microorganisms that shall be viable, active and abundant in the product to the date of minimum durability (live culture). In these products the protein content is increased prior to, or after fermentation, to a minimum of 5.6%. Concentrated Fermented Milks includes traditional products such as Straggisto (strained yoghurt) (Key aspects of the Codex Standard on fermented milks (CODEX STAN 243-2003).
