Flaounes with Kouroushis Fresh Anari

Flaounes with Kouroushis Fresh Anari Cypriot, festive flaounes by clinical Dietician Dr. Eleni Andreou (B. Sc, RD, LD), from her book "Healthy Recipes for a Healthy Nutrition".

Method

Step 1

Prepare the filling by crushing the anari and grinding the halloumi. Mix with the eggs, egg whites, flour, spearmint, mastic, cinnamon and mahleb.

Step 2

Knead the flour with the margarine and the orange juice and gradually add the rest of the ingredients, leaving the baking powder for last. Let the dough rise for about two hours and then knead the flaounes.

Step 3

Spread the pitas at 17cm by 17cm and fill with two tablespoons of filling.

Step 4

Smear the flaounes with the beaten egg and sesame and bake in a pre-heated, medium oven.

Dough
5 cups flour (2 cups whole-wheat and 3 cups white, all-purpose or village flour)
1 cup orange juice
Water – as much as necessary
3 tablespoons margarine
4 teaspoons baking powder
1 sachet vanilla
1 teaspoon sugar substitute - optional
Filling
250 grams Kouroushis Light Cheese 8%
1 egg
2 egg whites, beaten with 1 teaspoon oil
Some mastic, cinnamon, mahleb
½ cup fresh chopped spearmint
1 tablespoon flour or semolina
½ cup raisins
3 teaspoons baking powder
2 teaspoons sugar substitute – optional
Egg Wash
1 egg
2 tablespoons sesame
