In a bowl, sift the flour and cocoa powder, then add baking powder, baking soda and salt. Pour the milk in a cup, add vinegar and mix well. Keep on the side for 2 minutes. Pour it in a mixing bowl and add the sugar, eggs, food colouring, vanilla extract and kefir. Beat well and slowly add the flour mixture. Let the mixture rest for 5-10 minutes.
Grease a small pan (for crepes) and add 1 small cup of the mixture. Let it cook on low heat (the lowest your kitchen stove has available) for about 2 minutes until bubbles are created on the surface. Flip on the other side and cook for another 1-2 minutes. Repeat the process for the whole mixture. Stack the pancakes on a plate.
For the icing, add in a mixing bowl the cream cheese and butter. Beat until you achieve a fluffy mixture. Then add the rest of the ingredients and continue to beat for 1 minute, until everything is tied together. If you want your icing a bit more diluted, add a little more kefir. Pour the icing over the pancakes and garnish with berries or strawberries and mint leaves. Place the rest of the icing into a bowl for everyone to add extra icing to their pancakes if they want.
