GRILLED HALLOUMI SALAD, SPINACH AND TOASTED SEEDS DELICIOUS MOUTHFUL SALAD!

Method

Step 1

Fry the seeds in a dry pan with high temperature, moving them around the pan periodically so that they do not burn. This will take only a few minutes. Then put them aside. Using a speed peeler, cut carrots and fennel into thin ribbons. Place in a bowl of spinach and peas.

Step 2

Place the halloumi on a very hot pan and bake the slices for about a minute on each side. The cheese will soften slightly as you cook. At the same time put all the ingredients in a bowl along with lemon juice, olive oil, a pinch of salt and some pepper. After you try some, you can add more lemon.

Step 3

To serve, pour the pieces of halloumi over the salad and sprinkle with the toasted seeds.

Ingredients

1 handful of sunflower or zucchini seed
2 carrots, peeled
1 bulb fennel
2 pieces of spinach, washed and rounded
100 grams of fresh peas
250 grams HALLOUMI KOUROUSHIS cut into 1 cm slices
1 lemon
extra virgin olive oil
Sea salt
Freshly ground black pepper
