DELICIOUS MOUTHFUL SALAD!
Fry the seeds in a dry pan with high temperature, moving them around the pan periodically so that they do not burn. This will take only a few minutes. Then put them aside. Using a speed peeler, cut carrots and fennel into thin ribbons. Place in a bowl of spinach and peas.
Place the halloumi on a very hot pan and bake the slices for about a minute on each side. The cheese will soften slightly as you cook. At the same time put all the ingredients in a bowl along with lemon juice, olive oil, a pinch of salt and some pepper. After you try some, you can add more lemon.
To serve, pour the pieces of halloumi over the salad and sprinkle with the toasted seeds.
