PUMPKIN SOUP WITH YOGHURT AND CROUTONS PERFECT AND LIGHT WINTER SOUP

Method

Step 1

We clean and cut our vegetables into cubes. Be careful to remove all seeds from the tomato. We keep a little of the pumpkin on the side for the garnish, cut into cubes.

Step 2

In a large pot, add some oil and sauté the vegetables for a few minutes. Then add water until it is covered, salt, pepper and rosemary. Boil for about 20 minutes until all our vegetables soften.

Step 3

Drain the vegetables but keep the water in a bowl. Place the vegetables in the blender along with a little broth and slur it until they become cream.

Step 4

Put the mixture back in the pot and simmer on low heat for 3-4 minutes, adding butter and cream. If we want it lighter, add more broth.

Garnish and Serve

In a frying pan, put some olive oil and rosemary. When it’s hot, add the pumpkin cubes and sauté for 5 minutes adding salt. Then remove and place the mixture on a kitchen paper to absorb the oil. Serve the soup in a deep dish with a tablespoon of yoghurt in the middle and sprinkle with pumpkin cubes and croutons.

500 grams of pumpkin
3 potatoes
2 carrots
1 onion
1 tomato
1 clove of garlic
100 grams of heavy cream
50 grams of butter
500 grams of drained yogurt KOUROUSHIS
A little rosemary
Salt & Pepper
Sweet paprika
Some olive oil
Croutons
