Delicious pancakes made using Kefir that can be served plain or with a topping of your choosing: jam, syrup or honey, as well as fresh fruits.
Crack egg into a deep bowl, add sugar and beat until about tripled in volume
Carefully mix in kefir.
Sift and fold in all purpose flour and baking soda
Warm up a skillet with about 2 tablespoons of oil over a moderate heat; ladle a bit of the batter with a tablespoon and pour it to the skillet; repeat for several more pancakes. Let the pancakes fry on one side until light brown in colour. Flip them over using a spatula and fry from second side until ready.
