Spread the chicken breasts apart, add salt and pepper, chiromeri and anari cheese and roll. Keep them in place with toothpicks.
Dip into the flour and fry in hot oil. Place them in a preheated oven for 10 minutes.
Prepare the sauce: Sautee the scallions in the butter. Once withered, add the garlic. Add the lemon juice, the jelly, the broth and the thyme and cook on low fire for 5 minutes. Mix the corn flour with some cold water, add to the sauce and stir.
Cut the chicken rolls into 2-3 slices, drizzle with the sauce and garnish with the pomegranate seeds. Serve with vegetables and potatoes.
